If you're on a crowded bar, really crowded, and you have a credit card, listen closely. Order what you need to order, and when you're about to pay, you have two options:
1. You can either type the wrong PIN (but I don't recommend that) and pull your card out when it says "Please wait",
2. Or, when you've typed your PIN and the machine says "Please wait", pull your card out. The screen will say something like "not accepted", then just take your beer/drink and leave.
The good thing is, the bartenders are so busy that they won't even notice that the purchase wasn't accepted and even if they do, just tell them you're sorry and that of course you'll pay.
I've never experienced that I was to pay for the drink, because they really don't care, they haven't got the time for it anyway.
